As many of you know the words SIMPLE and EASY are a must when it comes to meal planning for this gal. Lately, I’ve been feeling uninspired in the kitchen, but also bored with my current meals. When I start to feel this way I know it’s time to change things up otherwise the risk of going off the rails is HIGH. Again…simple, easy, and uncomplicated are my top 3 requirements when it comes to adding something into my meal prep rotation. Some might call this lazy, but I’ve learned after doing this for many years this strategy is what works best for ME.
I strongly encourage you to find what works for YOU when it comes to implementing meal prepping and nutrition strategies. This is why the FASTer Way To Fat Loss works so well for so many of people. It’s no secret that I’m a huge fan of SkinnyTaste. Many of her recipes are easy and very macro friendly. When I stumbled across her Chicken Quiche recipe I knew I wanted to give it a try. Bad news was that I didn’t have any plain chicken on hand so I dug through my fridge and used what I could find. My recipe is below including the macro breakdown. Guys–this was STUPID easy and it takes SO good! Please let me know if you give this a try. Feel free to swap ingredients based on what’s hanging out in your refrigerator. You will likely find yourself pleasantly surprised. Quiche will be on repeat over here!
- 1 Pillsbury Pie Crust
- 5.5 oz ham
- 3 large eggs
- 1/2 cup egg whites
- 2/3 cup 1% milk
- 1/3 cup shredded cheddar cheese
- 1/2 cup onion
- 33g baby spinach
- Pre-heat over to 400 degrees
- Spray pie dish with cooking spray (don’t skip this step!)
- Transfer crust to pie dish and use a fork to poke several holes in the bottom of the crust to prevent bubbling
- Cook pie crust at 400 degrees for 15 minutes
- While the crust is baking – mix all quiche filling ingredients in a large mixing bowl
- Remove crust from oven, add filling, cook for 40 minutes or until eggs are set
Nutrition Information for one serving (1 quiche serves 8 servings): 196 calories, 10.7g fat/15.4g carbs/10g protein.
